Notes on Schmader Beef
We purchase our calves from a farmer in Portage County. The calves are Angus/Hereford cross-breeds, specifically bred for taste and quality beef production. They come to Schmader Farms about 1 year old, weighing ~600 pounds. We raise them for six months, finishing off about 1,100 pounds.
They graze in a large pasture with constant access to fresh water. They are finished on a ration of quality high-protein grain, expertly formulated for beef growth and nutrition. This balance of greens and grain give incredible flavor and marbling. We do not use growth hormones.
What to expect from a 1/2 side of Beef
Approximately 210 lbs of Meat (Take Home):
- 70 pounds ground beef
- 7 sirloin steaks, 3 porterhouse steaks, 8 T-bones, 9 rib steaks
- 8 “top” round steaks (aka London Broil)
- 7 packs beef stew (2-3 lb each)
- 6 chuck roasts
- 4 packs short ribs
- 1 roast beef (sirloin tip roast)
- 1 rolled rump roast, 1 pot roast (3-4 lb each)
- 1 brisket
- 8 packs soup bones, 5 packs boiling beef
Beef Price Estimates – 2024
$4.25-4.50 / hanging weight pound to Schmader Farms
$0.90-0.95 / hanging weight pound to local butcher + $120 dispatch fee
Quarter: Approximately $950 ($800 to Schmader Farms + $150 to local butcher)
Half: Approximately $1,900 ($1,600 to Schmader Farms + $305 to local butcher)
Whole: Approximately $3,800 ($3,200 to Schmader Farms, $610 to local butcher)
*Hanging weight is approximately 60% of the live weight of a beef cow. (Estimate 800lb hanging weight.)
